Apple Pudding

2 cup apple juice
2 Tbsp kudzu powder
2 bananas
1 tsp vanilla extract
dash cinammon

In a small pot, combine juice and kudzu, whisking to combine. Stir continuously as the pudding heats up to a boiling point. Mixture will brighten in color and thicken to pudding like consistency. Remove from the heat once thickened. Stir in bananas, vanilla extract and add a dash of cinnamon before serving. Enjoy hot or let cool in fridge.
